Banana Pancakes

My daughter loves Dosai and eats it almost everyday for breakfast. I was struggling to include eggs in her diet, so combined her love for dosai and bananas and her dislike for eggs into a single hearty dish of whole wheat banana pancake.

Try these soft and delicious Banana Pancakes, which is simple, easy and takes all of 10 minutes to prepare.

Ingredients

  1. Whole wheat flour: 1 cup
  2. Baking powder: 1 tsp (optional)
  3. Cinnamon powder: 1/2 tsp
  4. Salt: 1/4 tsp
  5. Egg: 1
  6. Milk: 2/3 cup
  7. Mashed banana: 2 medium size
  8. Vanilla essence: 1/2 tsp
  9. Coconut oil / Unsalted butter: 2 tbsp
  10. Honey / Maple syrup: 2 tbsp

Instructions:

  1. Add dry ingredients in a bowl and mix well.
  2. Add the wet ingredients in another bowl except the egg and mix well.
  3. Separate the egg yolk from the white and add the yolk to the wet ingredients and mix.
  4. Next, mix wet ingredients with the dry ingredients slowly such that there are no lumps and till it forms a thick batter.
  5. Whisk the egg white in a separate bowl for a few minutes till it becomes white and airy.
  6. Add the egg white to the batter and mix it lightly so that the egg white is folded into the batter.
  7. In a non-stick pan, kept on low heat, grease it with a little butter. Pour 1 ladle of batter once the pan is hot.
  8. Cook for 2-3 minutes till you see small bubbles forming.
  9. Flip it over and cook it for another couple of minutes.
  10. Serve it immediately with butter / peanut butter, honey / maple syrup and sliced bananas

Notes: 

  1. You may add baking powder if you want the pancakes to become fluffy.
  2. Whisking the egg white well makes the pancakes light and airy.
  3. You can make the pancakes eggless, by replacing the egg with 1/2 cup buttermilk. The batter should be thick in consistency.
  4. Ensure you do not spread the batter on the pan.
