Coriander chutney

Whether you are having sandwiches, samosas, pakodas, bhajjiyas, kebabs or papad, the dish is incomplete without coriander chutney. The chutney adds a layer of freshness to the otherwise heavy or rich Indian snacks. It’s not just an accompaniment, it’s an integral part of these dishes and so versatile.


🕝Preparation time: 10 minutes

Serves 2 cups


Ingredients:

  1. Coriander leaves: 100 gms
  2. Green chilli: 8 – 10 (adjust depending on your spice levels)
  3. Peanuts (roasted): 1/4 cup
  4. Lemon: 1
  5. Salt as per taste

Instructions:

  1. Clean and wash the coriander leaves with the stem in running water.
  2. Dry roast 1/4 cup peanuts either on a gas stove till it starts changing colour or microwave it for 2 minutes.
  3. Add coriander leaves, green chilli, roasted peanuts and salt as per taste in a mixer / blender. Grind it to a fine paste. Sprinkle some water if the chutney is too thick.
  4. Transfer the chutney into bowl and squeeze fresh lemon juice in it.

Serve coriander chutney with the snack of your choice.


Notes:

  1. You can add pudina / mint leaves, ginger, garlic, roasted bengal gram and cumin seeds / powder while making the chutney for additional flavour.
  2. Do not remove the peanut skin as it has high levels of antioxidants and is rich in fiber.
  3. For a longer shelf life, store the chutney in an air tight container and keep it in the freezer for future use.
