Baingan Bhaaja (Fried Eggplant / Aubergine)

It’s the perfect dish to have on a cool winter evening if you feel like having something hot and spicy. Also, as the Baingan is shallow fried, it requires less oil and is healthy.

Made with very few ingredients, this dish takes all of 30 minutes to prepare. Go ahead and try it.

Recipe for Baingan Bhaaja

Total duration: 30 minutes


Ingredients:

  1. Brinjal: 1
  2. Whole wheat flour: 5 tbsp
  3. Gram flour: 2 tbsp
  4. Red chilli powder: 2 tsp
  5. Sugar: 1 tsp
  6. Chaat masala: 4 tsp
  7. Turmeric powder: 1 tsp
  8. Salt: as per taste
  9. Garam masala: 1 tsp (optional)
  10. Asafoetida: 1 tsp

Instructions:

  1. Slice brinjal of about 1 cm thickness.
  2. In a large mixing bowl, add whole wheat flour, gram flour, red chilli powder, salt, sugar, chaat masala, turmeric powder, asafoetida and a pinch of garam masala.
  3. Mix all the ingredients well and rub this mixture on both the sides of each of the sliced brinjal such that it is fully covered in the masala.
  4. Cover the bowl and let the brinjal marinate for about 15-20 minutes.
  5. Next, in a saucepan, place the slices of brinjal, drizzle oil and shallow fry it.
  6. Once it turns golden brown flip it over and cook the other side.
  7. After both the sides are cooked well, transfer it onto a plate, and serve it hot with yoghurt or any dip of your choice

Tips:

  1. While buying brinjal, pick one which is light in weight. It should be oval in shape and big in size. Preferably select one which is not very hard and not very soft. Also, it should not have any holes in it.
  2. Adjust the flour and masala depending on the quantity of brinjal slices.
  3. Cook the brinjal in low to medium flame and check occasionally to ensure that it does not burn.
