My daughter loves Dosai and eats it almost everyday for breakfast. I was struggling to include eggs in her diet, so combined her love for dosai and bananas and her dislike for eggs into a single hearty dish of whole wheat banana pancake.

Ingredients
- Whole wheat flour: 1 cup
- Baking powder: 1 tsp (optional)
- Cinnamon powder: 1/2 tsp
- Salt: 1/4 tsp
- Egg: 1
- Milk: 2/3 cup
- Mashed banana: 2 medium size
- Vanilla essence: 1/2 tsp
- Coconut oil / Unsalted butter: 2 tbsp
- Honey / Maple syrup: 2 tbsp
Instructions:
- Add dry ingredients in a bowl and mix well.
- Add the wet ingredients in another bowl except the egg and mix well.
- Separate the egg yolk from the white and add the yolk to the wet ingredients and mix.
- Next, mix wet ingredients with the dry ingredients slowly such that there are no lumps and till it forms a thick batter.
- Whisk the egg white in a separate bowl for a few minutes till it becomes white and airy.
- Add the egg white to the batter and mix it lightly so that the egg white is folded into the batter.
- In a non-stick pan, kept on low heat, grease it with a little butter. Pour 1 ladle of batter once the pan is hot.
- Cook for 2-3 minutes till you see small bubbles forming.
- Flip it over and cook it for another couple of minutes.
- Serve it immediately with butter / peanut butter, honey / maple syrup and sliced bananas
Notes:
- You may add baking powder if you want the pancakes to become fluffy.
- Whisking the egg white well makes the pancakes light and airy.
- You can make the pancakes eggless, by replacing the egg with 1/2 cup buttermilk. The batter should be thick in consistency.
- Ensure you do not spread the batter on the pan.
