Whether you are having sandwiches, samosas, pakodas, bhajjiyas, kebabs or papad, the dish is incomplete without coriander chutney. The chutney adds a layer of freshness to the otherwise heavy or rich Indian snacks. It’s not just an accompaniment, it’s an integral part of these dishes and so versatile.
🕝Preparation time: 10 minutes
Serves 2 cups
Ingredients:
- Coriander leaves: 100 gms
- Green chilli: 8 – 10 (adjust depending on your spice levels)
- Peanuts (roasted): 1/4 cup
- Lemon: 1
- Salt as per taste
Instructions:
- Clean and wash the coriander leaves with the stem in running water.
- Dry roast 1/4 cup peanuts either on a gas stove till it starts changing colour or microwave it for 2 minutes.
- Add coriander leaves, green chilli, roasted peanuts and salt as per taste in a mixer / blender. Grind it to a fine paste. Sprinkle some water if the chutney is too thick.
- Transfer the chutney into bowl and squeeze fresh lemon juice in it.
Serve coriander chutney with the snack of your choice.
Notes:
- You can add pudina / mint leaves, ginger, garlic, roasted bengal gram and cumin seeds / powder while making the chutney for additional flavour.
- Do not remove the peanut skin as it has high levels of antioxidants and is rich in fiber.
- For a longer shelf life, store the chutney in an air tight container and keep it in the freezer for future use.
