Sweet Potato & Beetroot Burger

If you are bored of eating the same old burger from the usual fast food restaurant, then it’s time you make yourself a delectable and healthy veggie burger.

Ingredients:

  1. Burger buns – 4
  2. Beetroot – 2
  3. Sweet potato – 3
  4. Potato – 2
  5. Green peas – 1/2 cup
  6. Bell peppers – 1 yellow and 1 red
  7. Onion – 2
  8. Tomato – 1
  9. Lettuce – 1
  10. Peppercorns – 10
  11. Chilli flakes – 2 tbsp
  12. Peri peri sauce – 2 tbsp
  13. Ginger – 1 bulb (grated)
  14. Oregano / mixed herbs – 1 tbsp
  15. Oil – 1 tsp
  16. Butter – 1 tbsp
  17. Mayonnaise – 1/2 cup
  18. Corn flour / powdered oats – 1/4 cup
  19. Bread crumbs – 1/4 cup
  20. Cheese – 4 slices
  21. Bread – 7 to 8 slices
  22. Salt as per taste

Instructions:

  1. For making the patty, boil beetroot, potato, sweet potato and green peas.
  2. In a pan, kept on low flame, sauté onion and bell peppers until it’s cooked.
  3. Peel the beetroot, potato and sweet potato.
  4. Take 7-8 slices of bread and grind it to a fine powder.
  5. In a large mixing bowl, add the mashed potato and sweet potato, powdered bread, cooked onions, bell peppers and green peas. Grate the beetroot and add it in the bowl.
  6. Add 2 tbsp chilli flakes, 1 tbsp freshly ground pepper powder, 2 tbsp peri peri sauce, 1 bulb of ginger (grated), 1 tbsp oregano and salt.
  7. Mix all the ingredients well. Mash them with a fork or masher such that it is a slight crunchy mixture. (Do not make it to a smooth paste). If the patty batter appears to be sticky , then add 1/4 cup of corn flour / powdered oats as it helps in binding the patty.
  8. On a plate, add bread crumbs, take palm size patty and coat it with bread crumbs as it makes the patty crisp while frying.
  9. In a pan, kept on low heat, add oil and shallow fry the patty. Cook until it becomes crisp. Then flip it over, drizzle some oil and cook the other side.
  10. For making the burger, in a pan, lightly toast the inner side of the bun with/without butter.
  11. Apply mayonnaise on the bottom half of the burger. Then place lettuce, slices of tomato and onion. (For added flavour, soak the onion slices in vinegar for 15 minutes)
  12. You can choose to add peri peri sauce / chilli sauce / ketchup on it. Then carefully place the patty and a slice of cheese on it.
  13. Apply mayonnaise on the top part of the bun and serve it with ketchup / chilli sauce and chips.

Notes:

  1. Do not cook the sweet potato with beetroot and potato as sweet potato requires less time for cooking.
  2. After pressure cooking, suggest putting the beetroot and potato in a bowl of cold water as it helps in cooling and removing the peel quickly. Make sure the veggies are drained well before you start making the patty.
  3. For a healthier option, shallow fry the patty as it requires less oil and also enhances the flavour. Alternatively, you can deep fry the patty. However, make sure that the oil is really hot and the patty is firm. If the patty is soggy then it could disintegrate and break when you deep fry it.
