Vegetable Stir Fry | Sauteed Vegetable Salad with Boiled Eggs

I’ve had these exotic veggies for over a week now and have been postponing using them as I couldn’t make up my mind on what I wanted to cook.

So I decided to make something different yet simple to prepare and healthy.

Voila! Sauteed veggies to the rescue – healthy & wholesome


Recipe for Vegetable Stir Fry

Preparation time – 10 minutes
Cooking time – 20 minutes
Total – 30 minutes

Serves 2 persons


Ingredients

  1. Red peppers – 2 (sliced)
  2. Yellow peppers – 2 (sliced)
  3. Broccoli – 100 gms (1 cup of florets)
  4. Mushroom – 250 gms (sliced)
  5. Baby corn – 100 gms (sliced)
  6. Sweet corn – 1 cup (boiled)
  7. Spring onions – 1 bunch (finely chopped)
  8. Eggs – 2 (boiled)
  9. Olive oil – 5 tbsp
  10. Salt as per taste
  11. Mixed herbs – 2 tbsp
  12. Water – 5 cups

Instructions

  1. Wash all the veggies well and slice and keep ready.
  2. In a large saucepan, add extra virgin olive oil, broccoli florets, spring onions (keep the greens separately), red pepper, yellow pepper, mushroom and baby corn. Sprinkle some salt and sauté them on low to medium flame till they become soft.
  3. In the meantime, in a pressure cooker, add 2 cups of water, a pinch of salt and place the sweet corn in it. Cook the sweet corn for up to 5 whistles and then switch off the gas.
  4. Let the sweet corn cool down completely and then gently remove the kernels without it breaking and keep them aside.
  5. In a vessel, add 2 cups of water and place the two eggs in it. Cook it for 10 minutes and then switch off the gas. Next, drain the water and add tap water and keep the eggs in it for another 5 minutes.
  6. In a large mixing bowl, add the sauteed veggies, corn kernels, diced boiled eggs, mixed herbs, salt and pepper as per taste and give it a nice mix. Garnish it with the greens.

Your dish is ready to be devoured.


Tips:

  1. While buying sweet corn kernels, ensure you pick the ones which are fat and big in size as these are sweet in taste.
  2. For hard boiled eggs, cook it for 10 minutes. Incase you want soft boiled eggs, then cook it for just 5 minutes and drain the hot water and add tap water. Draining the hot water and adding tap water stops cooking the egg further.
